RICE PUDDING | |
3 c. milk (half whole milk and half evaporated milk) 1/2 c. raw rice 1 c. boiling water 1/2 c. sugar 1/2 tsp. salt 1 tsp. vanilla Wash rice, using a double boiler, pour sufficient hot water in the bottom portion of the double boiler. Put washed rice into the top portion of double boiler. Add 1 cup of boiling water and the salt. Boil for 30 minutes with the lid on. While rice boils, put 3 cups of milk in another pan and let it become hot, scalded. Do not boil. Grease 1 1/2 quart Pyrex glass round casserole dish with butter. Pour boiled rice and scalded milk in the dish. Then add the sugar and stir thoroughly. Sprinkle nutmeg on top of casserole. Bake in slow 350 degree oven for 30 minutes until a light crust has formed on top. Stir crust into mixture. Then add vanilla and let bake until brown crust forms and remove from oven. |
