RICE BALLS 
3 c. cooked rice, cool
3 egg yolks (save whites)
Parsley
1 c. Romano or Parmesan cheese
1 c. cooked ham, diced
Salt & pepper to taste
1 c. Mozzarella in sm. chunks

Mix first four ingredients together. Shape into balls with chunk of ham and chunk of Mozzarella in center. Dip in egg white and bread crumbs and fry until browned. Excellent!
