RICE CASSEROLE OR RICE BALLS 
3 lbs. rice (UNCLE BEN'S® or Carolina)
3 lbs. meat (chopped meat and/or sausage)
3 chopped lg. onions
3 cloves garlic, minced
3 sm. cans Hunts tomato sauce
Canned or cooked frozen peas
6 eggs
3/4 lb. butter, softened
Grated Parmesan cheese
Salt, pepper, basil, parsley
Bread crumbs
Wesson oil
Muenster or Mozzarella cheese (1 1/2 lbs.)

Cook rice according to package directions. Do not over cook. Take sausage meat out of casings, brown and set aside. Brown chopped meat and set aside. Discard drippings from meat.

Saute in oil the chopped onions and garlic. Discard some of the oil, if necessary and add the tomato sauce. Season with salt, pepper, allspice, parsley and basil. Simmer approximately 20 minutes. Add the cooked meat and cook just to blend. Add peas.

Meanwhile, rinse the cooked rice in cold water and add the six eggs, one at a time. Add the butter and grated cheese and parsley.

Grease 2 large pans, add a thick layer of rice. Top with all the meat mixture. Layer the meat with sliced Muenster or Mozzarella cheese. Top with remaining rice. Place remaining Muenster or Mozzarella cheese over the rice, sprinkle with flavored bread crumbs, dot with butter, heat until piping hot at 375 degrees for approximately 45 minutes. Test before removing from oven.

HINT: If you prefer to do this in advance and refrigerate, be sure to remove from refrigerator few hours before baking. This can also be frozen.

The same ingredients can be made into Rice Balls. However, for Rice Balls you must use Carolina Rice. Take a small portion of cooled rice prepared as above and place in the palm of your hand, cup your hand and place small amount of meat mixture and Muenster or Mozzarella pieces in the center of rice and then very carefully form a ball. Coat this ball with beaten egg, roll in flavored bread crumbs and deep fry.
