RICE MEAT BALLS 
1 c. minute rice
1 egg (1/4 c. Egg Beaters), slightly beaten
1 lb. ground beef, ground chicken or turkey
2 1/2 c. tomato juice
2 tsp. each salt & grated onion
1/2 tsp. marjoram
Dash of pepper
1/2 tsp. sugar

Mix all ingredients (except 2 cups tomato juice and sugar) with rice right from the box. Gently shape mixture into balls. Blend sugar and remaining juice. Pour into skillet with meat and rice balls. Bring just to a boil. Cover; simmer 15 minutes, basting occasionally. Sprinkle with chopped parsley, if desired. Serves 6.
