SHRIMP SCAMPI 
2 lb. uncooked jumbo shrimp, cleaned and shelled with tails left on
1/4 lb. butter, melted
1/2 c. olive oil
2 tbsp. lemon juice
1/4 c. finely chopped shallots
1 tbsp. finely chopped garlic
1 tsp. salt
3 tbsp. chopped parsley
Pinch of pepper

Combine butter, oil, lemon juice, shallots, garlic, salt, pepper and parsley. Mix well and pour over shrimp. Turn to coat well. Arrange shrimp in single layer in broiler-proof dish. Pour sauce over shrimp. Cover and refrigerate for 10 minutes before cooking. Broil for 3-4 minutes on each side. Serve over rice and garnish with parsley.
