SHRIMP SCAMPI 
1/4 c. butter
1/4 c. salad or olive oil
2 tbsp. chopped parsley
1 tbsp. garlic powder
1/2 tsp. salt
2 tbsp. lemon juice
1 lb. fresh shrimp, shelled & deveined, leaving tail on

Preheat oven to 400 degrees.

In large skillet with metal handle or heatproof serving dish, melt butter; add oil, half the parsley, garlic powder, salt, cayenne and lemon juice; mix well.

Add shrimp, tossing gently with butter mixture; arrange in skillet in single layer.

Bake 8 to 10 minutes or just until tender. Sprinkle with rest of chopped parsley. Bring skillet to the table garnished with lemon wedges if desired.
