CREAMY PINEAPPLE - ORANGE
GELATIN SALAD
 
servings:

1 (8 oz.) can crushed pineapple
1 pkg. orange flavored gelatin (4 serving size)
1 c. buttermilk
1 3/4 c. Cool Whip topping
1/2 c. chopped pecans

4 servings:

2 cans crushed pineapple (20 oz.)
2 pkg. orange flavored gelatin (4 serving size)
1 qt. buttermilk
7 c. Cool Whip topping
2 c. chopped pecans

Bring pineapple and juice to a boil. Take off heat, stir in gelatin with rubber spatula until dissolved. Let cool. Stir in buttermilk. Then fold in Cool Whip until lumps are gone. Stir in nuts. Pour into pan and cover. Refrigerate at least 4 hours. Cut into squares, put on lettuce leaf and top with Mandarin oranges. Use an 8 x 8 pan for 6 servings and 13 x 9 x 2 for 24 servings. This recipe can be made 3 days ahead.
