SAUCY ROAST BEEF 
1/4 c. chopped onion
2 tbsp. butter
1 (16 oz.) can tomatoes
1 (10 3/4 oz.) can tomato soup
1 (4 oz.) can sliced mushrooms or fresh
1/2 tsp. crushed dried basil
2 c. cooked beef (or pork) in bite-size pieces
1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. oregano

Cook onions (and fresh mushrooms if used) in butter. Add tomatoes, tomato soup and seasonings. Bring to a boil. Reduce heat and simmer uncovered for 20 minutes. Add meat and just heat through. Serve over rice or noodles.
