POTATO STUFFED CHICKEN 
1 (4 lb.) roaster chicken
3 to 4 c. cooked new or red potatoes
3 tbsp. olive oil
1 tbsp. capers
1 tbsp. rosemary
2 cloves crushed garlic
3 tbsp. fresh chopped parsley
10 cut up stuffed green olives

Cook new potatoes for 25 minutes. Drain and add other ingredients to quartered potatoes. Toss and stuff into the cavity of the chicken. Bake in a 375 degree oven for 70 minutes.
