CHICKEN WITH POTATO STUFFING 
2 c. hot mashed potatoes
1 1/4 c. soft bread crumbs
1 med. onion, finely chopped
1 tbsp. butter
1 egg
1 tsp. sage, if desired
1 1/2 tsp. salt
Pepper to taste
1 1/2 tsp. paprika
1 lg. roasting chicken

Wash chicken well and dry the cavity. Place in roasting pan with 1 cup of water. Mix well ingredients together as they are listed and then stuff then chicken. Roast at 375 degrees until chicken is tender. Baste often. Garnish with parsley and red cranberries.
