BEAN MUSHROOM MEDLEY | |
8 oz. fresh green beans, cut into 1-inch pieces 1 medium onion, cut into 1/4-inch slices 1/4 tsp. garlic powder 1 tbsp. butter 2 medium carrots, cut into 3/8-inch strips 8 oz. fresh mushrooms, cut into 1/4-inch slices 1/8 tsp. pepper sprinkle of salt (optional) Boil 1-inch of water in a 2-quart saucepan. Add beans and carrots. Heat to boil; reduce heat. Cover and simmer, stirring occasionally, until almost tender, about 12 minutes. Drain. Cook onions and mushrooms in a 10-inch skillet over medium heat in 1-inch of water and butter until almost tender, about 5 minutes; reduce heat. Cover and cook 3 minutes. Stir in beans, carrots, garlic, salt and pepper. Cover and cook 5 minutes. Serves 5 to 6. |
