GREAT GREEN BEANS | |
2 lbs. fresh green beans, cleaned & trimmed 1/4 c. olive oil 1 clove garlic, minced 1 red onion, chopped 8 oz. mushrooms, sliced 1/2 tsp. oregano 1/4 tsp. basil 2 tbsp. parsley 2 tbsp. lemon juice Salt & fresh ground pepper to taste 1/4 c. Parmesan cheese Cook beans 3 minutes to crisp tender; drain. Heat oil in medium saucepan. Add onion, garlic and spices. Cook until onion is just tender. Add mushrooms and lemon juice. Simmer 5 minutes. Just prior to serving, toss green beans into oil mixture. Heat through. Serve topped with Parmesan cheese. |
