SWEDISH MEATBALLS 
1 (10 1/2 oz.) can condensed cream of celery soup
1 soup can water
1 lb. ground beef
2/3 c. fine dry bread crumbs
1 egg, slightly beaten
2 tbsp. minced onions
1 tbsp. chopped parsley
1 tsp. salt (optional)
1 tbsp. shortening
1/2 to 1 c. mashed potatoes, if you have them

Blend soup and water. Measure out 1/4 cup of this mixture; combine with beef, bread crumbs, egg, onion, parsley, salt, and potatoes. Shape into 1-inch meatballs.

In large skillet, brown meatballs in shortening. Add remaining soup. Cook covered over low heat 20 minutes. Stir now and then. Makes 4 servings.
