MINT JELLY 
2 c. apple juice
1 1/2 c. sugar
1 tsp. mint extract
Green food coloring

Combine apple juice and sugar and boil rapidly. When mixture is nearing jelly stage, add the mint extract. Boil rapidly to jelly stage. When ready to remove from heat, add green coloring for desired shade. Pour into sterilized jelly glasses and seal with paraffin or use half pint jars. Fill to within 1/2 inch of top. Put on cap, screw band firmly tight. Process in boiling water bath 5 minutes. Yields 2 (8 ounce) glasses or jars.
