MESQUITE BEAN JELLY 
4 1/2 c. juice
1 box Sure Jell
1/4 c. lemon juice
7 1/2 c. sugar

Pick mesquite beans when they are in the pink to purple stage, or may even be used when they are completely dried. Break into small pieces that will fit into pan. Cover with water. Bring to boil. Reduce heat to simmer. Simmer at least 3 hours. However, the longer the beans simmer, the more flavorful it will be, making sure water level is maintained. Strain. Discard beans. Reserve juice. Bring juice to boil. Add Sure Jell and lemon juice. Boil one minute. Add sugar. Boil 5 minutes. Pour into sterilized jars and seal. Looks and tastes much like honey.
