ASIAN-INFLUENCED COLESLAW | |
1 small head red cabbage 1 large or 2 small carrots 1/2 medium red onion 1/2 cup olive oil 1/4 cup sesame oil 3/4 cup plain vinegar 1/2 cup raw honey 1/4 cup soy sauce, or to taste (I use Tamari sauce) Note: Good quality cold-pressed oils preferred. Pour the liquid ingredients and honey into a small saucepan and heat on low just until the honey is melted (avoid boiling to keep the good heard-healthy properties of the olive oil and sesame oil). Shred the cabbage, carrots and mince the onion. Combine all ingredients into a glass bowl and refrigerate for approximately 4 to 12 hours. Serves 4 to 5 for side dishes. Variation: Fresh minced ginger (1 teaspoon) could also be added to the dressing mix for added spice. Submitted by: Genyphyr Novak |
