SPANISH POTATOES 
1 onion, sliced
2 tbsp. butter
1 tbsp. flour
2 c. cold diced potatoes
1 pimento
1 c. milk

Brown the onion in 1 tablespoon of the butter, then brown the potato cubes. Put in layers in a baking dish with the pimento. Make a white sauce with the remaining butter, the flour and the milk; pour over the potatoes. Bake at 375 degrees for 30 minutes.
