FANCY SCRAMBLED EGGS 
4 oz. Canadian bacon, diced
3 green onions, chopped
3 tbsp. butter

Cook until onions are tender but not browned. Set aside. Make cheese sauce: 2 tbsp. flour Salt and pepper 2 c. milk 4 oz. shredded cheese

Make like a white sauce. Cook until it bubbles, then add cheese. Set aside. To the bacon and onion mix, add 12 eggs, stir, and cook like scrambled eggs until just set. Fold into cheese sauce. Add 1 (3 ounce) can mushrooms. Pour into 9 x 13 inch pan. Mix: 4 tsp. butter 1/8 tsp. paprika

Put on top of casserole. Refrigerate overnight. Bake at 350 degrees for 30 minutes.
