BOURBON BAKED BEANS 
1 can (1 lb. 4 oz.) sliced pineapple
2 cans (1 lb. 12 oz. each) baked beans
1/2 c. brown sugar, firmly packed
1/3 c. bourbon
1/4 c. instant minced onion
1 tbsp. instant coffee
1 tsp. dry mustard
6 slices bacon

Drain pineapple, reserving 1/3 cup syrup. In a 13 x 9 x 2 inch baking dish, combine beans, pineapple syrup, brown sugar, bourbon, onion, instant coffee and mustard. Let stand at room temperature for 1 hour. Arrange bacon slices on top of beans and pineapple slices on top of bacon. Bake, uncovered, at 375 degrees for 1 1/2 hours. Makes 8 to 10 servings.
