CHICKEN ENCHILADAS 
3 cans (hot or mild) enchilada sauce
2 pkgs. tortillas (frozen)
2 pkgs. cheddar cheese
1 chicken
1/2 pt. whipping cream

Boil chicken, let cool and tear into small pieces. Fry tortillas in butter until soft, one at a time. Dip in enchilada sauce, lay small amount of chicken inside and roll up. Fill bottom of casserole dish with tortillas, already coated with enchilada sauce. Sprinkle 1/2 of grated cheddar cheese and top with sauce. Make another layer the same way. Coat with whipping cream and remaining sauce. Cook in 350 degree oven for 1 hour until real hot.
