CHOCOLATE PIE | |
1/4 c. cocoa 1/3 c. flour 1 c. sugar 1/4 tsp. salt 2 1/2 c. scalded milk 3 eggs (separated) 1 tsp. vanilla 1 (9 inch) baked pie shell 1 tbsp. butter Into large double boiler mix 1 cup sugar, 1/4 cup chocolate, 1/3 cup flour and 1/4 teaspoon salt. Scald milk and mix well with dry ingredients. Cook until slightly thickened. Pour small amount of hot mixture over beaten egg yolks. Mix well and return to mixture in double boiler and cook until thick. Remove from heat. Add butter. When almost cool add vanilla and 2 tablespoons prepared meringue. Fold in and pour into baked pie shell. Pile remaining meringue over pie and bake at 350 degrees until lightly brown. MERINGUE: Beat three egg whites, 1/4 teaspoon cream of tartar, 1/2 teaspoon vanilla until soft peaks form. Add 6 tablespoons sugar beating until firm peaks form and all sugar is dissolved. Spread on top of pie. Sealing to pastry. Bake at 350 degrees approximately 10 minutes or until golden brown. |
