PINTO BEAN PIE 
1 c. cooked pinto beans, well mashed
1 c. sugar
3 egg yolks, slightly beaten
1 c. milk
1 tsp. vanilla
1 tsp. nutmeg
Nuts (optional)

Combine all ingredients into bowl, mix well. Put into pie shell. Bake at 350 degrees for approximately 30 minutes or until knife inserted into middle of pie comes out clean. Tastes somewhat like pumpkin, only better. Odd but good!
