MICROWAVE SUNSHINE YAMS 
2 lb. yams
1/2 c. brown sugar
2 tsp. cornstarch
1/2 tsp. salt
1/4 tsp. pepper
1/3 c. apple juice
2 tbsp. lemon juice
2 tbsp. butter
1/2 tsp. grated lemon rind
Paprika

Scrub yams. Cut off any long, narrow ends. Pierce a couple of times on each side. Place in a micro-safe dish, 1 inch apart. Microwave at HIGH power for about 8 minutes. Turn over. Rearrange after half of cooking time. The yams should be tender when pierced. Let stand 10 minutes. Cool and peel. Combine brown sugar, cornstarch, salt, and pepper in micro-safe cup. Stir in apple and lemon juices. Microwave at HIGH power for 1 1/2 to 2 minutes. Whisk once after 1 minute. Stir in butter and lemon rind. Mash or process yams with juice mixture. Spoon into a 1 quart micro-safe casserole. Dab with a little extra butter. Sprinkle with paprika. Cover with wax paper. Microwave at HIGH power for 5-7 minutes until steaming hot. Makes 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
