CARROT RING 
1/2 c. soft bread crumbs
3 eggs
1 sm. onion
1/4 c. parsley
1 tbsp. butter, melted
1/4 tsp. cinnamon
1/4 tsp. salt
1/8 tsp. pepper
2 1/2 c. carrots, cooked
1 tbsp. brown sugar or maple syrup
1 can sm. peas or 1 box frozen peas

Place all ingredients except peas in food processor; process 1 minute or until carrots are very fine. Turn into an 8 inch ring mold; set in a shallow pan of water; bake at 375 degrees for 30 minutes or until set and firm.

Meanwhile heat peas thoroughly. Unmold carrots on serving plate; fill center with tiny peas. Serves 4.
