CORNMEAL CRACKLES 
1 c. cornmeal
1/2 c. sifted flour
1/4 tsp. salt
1/4 tsp. baking soda
1/8 tsp. paprika
2 tbsp. bacon fat or oil
1/3 c. milk
1 tbsp. butter

Preheat oven to 350 degrees. Combine all ingredients except butter. Stir well. Knead the dough 10 minutes. Roll it into 1 inch balls; flatten well by rolling, slapping between palms - tortilla fashion, paper thin! Bake on ungreased sheet 15 minutes. While hot, brush with butter, sprinkle with salt. Cool on rack.
