POTATOES O'BRIEN | |
3 slices bacon, diced 1/4 c. salad oil 1/4 c. chopped onion 1/4 c. chopped green pepper 1/8 c. diced pimentos 1 1/2 lbs. potatoes, cooked and diced Fry bacon in skillet until done but not crisp. Drain off half the bacon fat and add half the oil to the skillet. Saute the onion and peppers until tender. Add pimentos and keep warm. Saute the potatoes in another pan in the remaining oil. Mix in the bacon garnish just before serving. |
