FLAKED SALMON PUDDING 
4-6 drained & flaked salmon (16 c.)
1 c. fine bread crumbs
2 tbsp. chopped parsley
1/2 c. minced onion
1 tsp. dry mustard
1 tsp. salt (scant)
1/2 tsp. pepper
1/2 c. milk
2 tbsp. melted butter
2 egg yolks

Beat 2 egg whites until stiff in flaked salmon. Beat the above until stiff and fold into flakes salmon mixture. Pour into well greased loaf pan or mold. Bake in moderate, 350 degree oven, for 30 minutes. Serve hot with a sauce made by thinning condensed tomato soup with a little white wine, sherry or milk or a mushroom sauce, flecked with parsley.
