CHEESE-PUFFED POTATO CASSEROLE 
4 eggs, separated
4 cups well seasoned, mashed potatoes
1/2 block butter
1 cup shredded cheddar cheese
2 to 3 tsp. finely chopped onion
2 to 3 tsp. finely chopped green pepper
salt and garlic salt to taste
milk (enough to get the right consistency)

Beat egg yolks with mashed potatoes until well blended. Stir in cheese and seasonings. Before baking, beat egg whites until stiff and fold into potato mixture. Spoon into a greased casserole. Sprinkle with paprika and bake at 375°F for 25 minutes.

Serves about 6.
