MY MOTHER'S HAMBURGER AND RICE
CASSEROLE
 
1 onion, chopped
1 bell pepper, chopped
1 1/2 lb. ground beef
2 cans cream of mushroom soup
1 can tomatoes (1 lb.)
Oregano, thyme, salt & pepper
1 sm. box Minute rice
Velveeta cheese

Brown the first 3 ingredients. Add seasonings, soup, tomatoes and rice. Simmer 5 minutes. Pour into casserole and place slices on cheese on top. Bake for 30 minutes at 350 degrees.
