OATMEAL CAKE 
Cake:

1 c. oatmeal
1 1/4 c. boiling water
1 c. white sugar
1 c. brown sugar
1/2 c. butter
2 eggs
1 tsp. vanilla
1 1/2 c. flour
1/2 tsp. salt
1 tsp. baking soda

Soak oatmeal in boiling water. Preheat oven to 350°F. While oatmeal cools, cream butter and sugars. Beat in eggs, vanilla and oatmeal. Mix flour, salt and baking soda in a bowl and add to mixture. Pour into 9 x 13 cake pan.

Bake for 25 to 30 minutes.

Frosting:

1/4 c. butter
1/2 c. brown sugar
3 tbsp. milk
3/4 c. coconut

Mix frosting ingredients, will not be thick. Spread carefully on hot cake. Put back in oven and carefully broil until brown.
