OATMEAL CAKES 
2 c. butter, softened
2 c. brown sugar, packed
2 c. white sugar
4 eggs
3 c. flour
1 tsp. salt
2 tsp. baking soda
6 c. quick oats (uncooked)
1 1/2 c. coconut

Combine all ingredients. Drop by spoonfuls on greased cookie sheets.

Bake at 350°F for 8 to 10 minutes. Wash cookie sheet each time.

Filling for Oatmeal Cakes:

5 tbsp. flour
1 c. milk
1 c. shortening
1 c. plus 2 tbsp. sugar
1/2 tsp. salt

Cook flour and milk to make a paste. Put in a covered bowl and chill. In a small bowl, cream shortening, sugar and salt. Add to it the chilled paste, one tablespoon at a time. Blend until smooth. Put 1 tablespoon of filling between 2 cookies.
