EGGPLANT FRITTERS - From India | |
2 tbsp. gram flour 1 tsp. salt 1/4 tsp. ground turmeric 2-4 coriander seeds Oil for deep frying 2 eggplants, cut into 1/4" slices Mix the flour, salt and spices in a bowl and stir in enough water to form a thick batter of a consistency similar to porridge. Dip the eggplant slices in the batter and deep fry them in the hot oil until golden brown. Drain on paper towel. Serve hot. Serves 4-6. |
