QUICK MINESTRONE SOUP 
1 tbsp. vegetable oil
1 zucchini, chopped
Handful of leftover cooked meat, chopped
1 (16 oz.) can tomatoes, cut up
Sm. handful uncooked elbow macaroni
1 (8 oz.) can green beans (or any leftover vegetables)
2 c. water
1 envelope dry onion soup mix

In saucepan over medium heat, heat oil; stir in zucchini and meat. Stir and cook 2 to 3 minutes. Add tomatoes, beans and water. Bring to a boil. Stir in onion soup mix and macaroni. Simmer, covered, until macaroni is tender, about 10 minutes.
