QUEEN ESTHER CAKE 
1 c. sugar
1/2 c. shortening
1/2 c. milk
2 c. flour
2 tsp. cream of tartar
1 tsp. baking soda
1/2 tsp. salt
3 egg whites beaten and put in last

4 teaspoons baking powder can be used instead of cream of tartar and baking soda. Cream sugar and shortening together, add flour, cream of tartar and baking soda alternately with the milk. The batter will be very stiff. Beat egg whites and stir in last. Bake in 8 inch pan at 350 degrees for 45 minutes.
