FRUIT COCKTAIL CAKE 
1 egg
1 c. sugar
1 1/2 c. flour
3/4 tsp. baking soda
1 can (29 oz.) fruit cocktail, drained
1/2 c. brown sugar
1/4-1/2 c. chopped nuts

Beat egg. Add sugar; beat well. Stir in flour and baking soda; blend well. Fold in drained fruit cocktail. Spread into an 8 or 9 inch microwave cake baker or greased glass baking dish.

Combine brown sugar and nuts; sprinkle on top of cake batter. Microwave on 50% power for 7 minutes. Microwave on high for 3-4 minutes. Serve with whipped cream or ice cream.

Since microwave ovens vary in power, you may need to adjust your cooking time.
