FROZEN KEY LIME PIE 
3/4 c. Key lime juice
1 can (14 oz.) sweetened condensed milk
1 (3 oz.) pkg. cream cheese
3/4 tsp. fresh ginger, grated
4 tbsp. grated lime peel, divided
1 pt. whipping cream
3 tbsp. sugar
1 unbaked 9 inch graham cracker crust

In a medium bowl, combine lime juice, condensed milk, cream cheese, fresh ginger and 2 tablespoons lime peel. Beat with rotary mixer at medium speed until well blended.

In a separate bowl, beat whipping cream with sugar until it holds firm peaks. Fold into first mixture until well blended. Pour into crust, mounding in center. Sprinkle with remaining lime peel. Freeze until firm.

Before slicing, allow to stand at room temperature for 20 to 30 minutes. Freeze leftovers. Makes 8 to 10 servings.
