MEDITERRANEAN OPEN-FACED
SANDWICH
 
1 lb. Mozzarella cheese, grated
1 lb. Swiss cheese, grated
6 strips bacon, fried or microwaved crispy
1/2 can black olives, sliced
1 small onion, minced
pita bread (flat bread)
1 c. mayonnaise

Mix grated cheeses together with mayonnaise and minced onion. Add black olives and bacon, crumbled. Spread mixture on pita breads (like a small pizza) and broil 2 to 3 minutes until cheese is bubbly and just slightly brown. Should make enough for 6 to 8 pita sandwiches or 3 to 4 large pita breads. Delicious!

Since microwave ovens vary in power, you may need to adjust your cooking time.
