FISH LOAF 
1 c. water
1 lb. fresh or frozen fish fillets
1/2 c. bread crumbs
2 tbsp. chopped parsley
1 tsp. dry mustard
1 tsp. salt
1/2 tsp. pepper
1/4 c. milk
2 tbsp. melted butter
2 egg yolks
2 egg whites

Pour water over fish fillets in large pan. Bring to a boil; cover and simmer gently 5-10 minutes until fish flakes when fork-tested. Drain and flake fish. Combine bread crumbs, parsley, onion, mustard, salt and pepper. Add milk, butter and egg yolks, beat well. Stir in flaked fish. Beat egg whites until stiff and fold into flaked fish mixture. Pour into a well greased loaf pan and bake at 350 degrees for 30 minutes. Serve hot or cold.
