SHRIMP STUFFED SOLE 
3 tbsp. each flour and butter
1 1/2 c. half and half
1 c. grated Gruyere cheese
1 tbsp. sherry
6 lg. fillets
1 1/2 c. cooked shrimp
2 tbsp. parsley
Salt and pepper

Make cream sauce and add cheese and sherry. Wash and dry fish, chop shrimp. Add several tablespoons cream sauce, parsley, salt and pepper to shrimp. Place on fish and roll up seam side down. Pour sauce over fish. Bake uncovered at 350 degrees for 30 minutes.
