LEMON PEPPER LONDON BROIL 
1 1/4 lbs. flank steak
1 med. lemon juice
2 tbsp. vegetable oil
1 clove garlic, crushed

Score both sides steak in a diamond pattern, cutting no deeper than 1/8-inch. Put into heavy plastic bag with rest of ingredients. Seal and marinate in refrigerator at least 2 hours or up to 6 hours. Remove from bag and sprinkle generously with pepper. Grill 4 to 6 inches over hot coals 5 to 7 minutes per side for medium-rare. Do not overcook, as flank toughens. Let stand 5 minutes before carving.
