SWEET POTATO SOUFFLE | |
2 c. mashed sweet potatoes 1 c. sugar 1 egg 1/2 tsp. salt 1 tbsp. vanilla 1 c. milk 1/2 stick butter 1/2 can coconut Mix and bake at 325 degrees for 45 minutes. TOPPING: 1 sm. can crushed pineapple 1 bottle maraschino cherries, juice & all 1 c. sugar 2 tbsp. cornstarch Mix sugar, cornstarch, pineapple, cherries and juice. Bring to a boil for 2 minutes. Pour over cooked potatoes. You may add red food coloring. |
