GRASSHOPPER BARS 
BARS:

4 sqs. unsweetened chocolate
2/3 c. cooking oil
2 c. brown sugar
3 eggs
1 1/4 c. flour
1/4 tsp. salt
1/2 tsp. baking soda
1 tsp. vanilla

FILLING:

4 c. powdered sugar
1 1/2 sticks soft butter
2 tsp. peppermint
3 tbsp. milk
Green food coloring

TOPPING:

1 (6 oz.) chocolate chips
5 tbsp. butter

Grease and flour 10 1/2 x 15 1/2 x 1 inch jelly roll pan. Melt chocolate and oil in double boiler or microwave. Add next six ingredients; combine well. Place all the ingredients in pan. Bake at 350 degrees for 12 to 15 minutes. Test with toothpick, being careful not to overbake. Cool completely. Beat filling ingredients and food coloring until fluffy, spread evenly on cooled bars.

Melt topping ingredients in double boiler or microwave. Frost green layer with chocolate topping. Refrigerate to set chocolate. Warm slightly at room temperature before slicing into small bars. If chocolate is too cold it may crack during cutting. 64 bars. Freezes well.

Since microwave ovens vary in power, you may need to adjust your cooking time.
