FRENCH APPLE PIE 
9 inch pie

FILLING:

3/4 c. sugar
1/2 tsp. cinnamon
1/4 tsp. nutmeg
6 to 7 c. sliced apples

TOPPING:

1/2 c. butter
1/2 c. brown sugar

Cut in: 1 tsp. cinnamon

8 inch pie

FILLING:

1/2 c. sugar
1/2 tsp. cinnamon (scant)
1/4 tsp. nutmeg (scant)
4 to 5 c. sliced apples

TOPPING:

6 tbsp. butter
6 tbsp. brown sugar

Cut in: 1 tsp. cinnamon (scant)

If you like, make shells from crust recipe below. Fill with apple filling. Sprinkle topping mixture on top, leaving it a little thin at edge next to crust. Bake 50 to 60 minutes at 400 degrees. My special instructions. We prefer golden delicious apples. After slicing, wilt them in the microwave oven for 3 or 4 minutes. Cool thoroughly. Then mix remaining filling ingredients and proceed.

MOM'S PIE CRUST:

Measurements are for a single 9 inch crust. 1/2 tsp. salt 1/2 c. shortening (generous) 3 tbsp. water

Cut shortening into flour mixture until lumps the size of a small pea. Sprinkle on water and squeeze into a ball. Don't overwork. Flatten and roll out to a strong 1/8 inch. Fit to pan and work edges as you like.

Since microwave ovens vary in power, you may need to adjust your cooking time.
