FLAT APPLE PIE 
CRUST:

1 c. shortening or butter
2 1/2 c. flour
1 tsp. salt
1 egg, separated

Combine shortening with flour and salt until well blended. Put egg yolk in measuring cup. Beat with fork. Add milk to make 3/4 cup. Add to dry mixture. Divide dough in half. Roll out half and put on cookie sheet. Save other half for top crust.

FILLING:

8 to 10 c. thinly sliced apples
1 c. sugar
Cinnamon to taste
Butter to taste

Put apple slices on crust on cookie sheet. Pour sugar over apples. Sprinkle with cinnamon and dot with butter. Roll rest of dough for top. Beat egg white and spread over top crust. Bake at 350 degrees for 45 minutes.

GLAZE:

3/4 c. powdered sugar
Milk
Vanilla

Mix powdered sugar with milk and vanilla to make glaze. Pour over pie when done.
