SOUTHWESTERN BAKED CORN PUDDING 
2 eggs, beaten
2 (16 oz.) cans cream-style corn
3/4 c. yellow cornmeal
1 clove garlic, minced
1 large onion, chopped
1/2 tsp. baking powder
1/3 c. butter
1 (4 oz.) can chopped green chiles
1/2 lb. grated sharp Cheddar cheese

Preheat oven to 375°F. Grease a 2-quart casserole. Combine all ingredients in the order given and pour into prepared casserole.

Bake for 45 minutes at 375°F. Lower temperature to 325°F and bake for 30 to 45 minutes.
