STEAMED SPINACH 
1 box frozen cut leaf spinach
2 tbsp. butter
2 tbsp. flour
1 tbsp. minced onion
1/2 c. milk
Nutmeg & salt to taste

Steam spinach. It will be done when it's hot all the way through; around 15 minutes. Mince onion very fine and saute lightly in butter. Add flour and cook 1 minute, stirring constantly. Add milk, nutmeg and salt. Press cooked spinach lightly to remove excess water and add to sauce. Stir gently.
