PERSIMMON COOKIES 
1 c. mashed, persimmon pulp
1/2 c. butter
1 1/2 c. sugar
2 c. sifted flour
1/8 tsp. salt
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. nutmeg
1 c. chopped nuts
1 c. raisins
1 egg, beaten
1 tsp. vanilla

Cream butter and sugar until creamy. Combine flour, salt, soda and spices, add nuts and raisins; then add all to creamed mixture. Then add and stir in the persimmon pulp, egg and vanilla. Mix well. Drop by scant teaspoonful on greased cookie sheet and bake at 375 degrees for 13 to 15 minutes. Makes 5 dozen cookies.
