“CARROT CAKE” IS IN:

CARROT CAKE 
2 cups grated carrots (about 4 large)
1 1/2 cups vegetable oil
4 eggs
2 tsp. vanilla
2 cups sugar
3 cups all-purpose flour
2 tsp. cinnamon
2 tsp. baking powder
2 tsp. baking soda
1/4 tsp. salt
1 cup ground nuts
1/2 cup yellow raisins, plumped in hot water and dried
confectioners' sugar, for dusting

Combine and beat together carrots, oil, eggs and vanilla. Add sugar and sifted dry ingredients. Mix well. Add ground nuts and plumped raisins. Mix and pour into greased 10-inch tube pan.

Bake at 375°F for 1 hour. Dust with confectioners' sugar.
