PASTRY:

2 c. flour
1/3 tsp. salt
1 c. shortening
5 to 6 tbsp. water

FILLING:

1 c. strawberry jam
1 c. whipping cream, whipped

Cut shortening into flour and salt; add enough water to hold pastry together and mix lightly. On a floured board, form into 4 balls. Roll out each ball into an 8-inch round. Transfer onto a baking sheet. Prick with a fork and bake in a hot 425 degree oven for 12 to 15 minutes or until light brown.

Place a round of pastry on a large plate, spread with jam, top with whipped cream. The other rounds are laid on top of the first, each with its quota of jam and cream, the top most layer being given an especially generous layer of whipped cream. Yield: 8 servings.
