SWEET POTATO SOUFFLE 
3 c. canned sweet potatoes or yams
2 eggs
Pinch salt
1/4 c. milk
1/4 c. yam juice
2/3 c. sugar
1 tsp. vanilla
1 tsp. cinnamon
1/3 c. butter

Mix together with hand mixer. Place mixture in large casserole (allow space to rise). Cover with topping. Bake at 375 degrees for 25 to 35 minutes.

TOPPING:

1/2 c. brown sugar
1/2 c. chopped pecans
1/4 c. melted butter
1/4 c. flour
Coconut (optional)

Mix by hand.
